I've got some Falken wheels currently with 205/40/17s and I was wondering if 215/55/17s would fit?

May fit...but your speedo is going to be off ~12%.
A really 'different' tire size.
Good site to check out tire size changes below: just plug in your sizes via their method:

What are you trying to accomplish here? The diameter of the tire needs to stay roughly the same. You can go a little bigger or smaller, but your speedo will be affected.

If you're looking to run a wider tire for better traction while staying with a 17" wheel, the size that works best is 235/35/17. That would match the diameter of your current tire perfectly. The tire you've chosen is nearly 3" bigger in diameter, that's a HUGE difference.
