Check out Elmer Kelton. He has a series involving Texas Ranger. Kelton's books are definitely a cut above average.

Paulette Jiles "Stormy Weather", an excellent, literate read set in Texas during the depression.

"Plainsong" and "Eventide" are back-to-back classics by Kent Haruf, set in mid-20th century in Colorado.

Someone already mentioned L'Amour, and his novels are historically accurate. Someone also mentioned the Wagons West series, but it's only the first half dozen or so that are any good. "Dana Fuller Ross" is a pen name owned by the original publisher, and many people wrote parts of that series under it. The later books seemed like whoever was writing didn't even bother to go back and read any of the earlier stories to find out what was going on.

This is not per the request of the OP's quest for a good novel but Larry McMurtry's own tale of his growing up in Texas ('Walter Benjamin at the Dairy Queen') and the great descriptions of the early people who inhabited the ranges of the south west before the commercialization of ranching is still one great book. He said it would be the closest he will ever come to writing an autobiography, it also is a must read for any who (like McMurtry) consider the love of books to be one of life's great gifts.
