What you are describing is minimalism or frugal traveling not camping...Camping is not for frugal living but rather for reconnecting with nature...My setup is just a 3man tent and bags, an old Coleman burner plate for cooking and a few chairs.
I didn't coin the term "car camping," but I assure you the term now also applies to sleeping in one's vehicle in rest areas and truck stops and parking lots as well as in the wilderness utilizing actual camping gear. "Vanlife" also applies, except that those enthusiasts drive vans and not cars.

I agree. Sleeping in a car at a Wal-Mart parking lot after eating some Wal-Mart chicken tenders is not camping in my book. I've slept a few nights in at pull off rest stop too- not camping. That's resting.

Agree as well. I know it's become a popular term adopted by those who do this but that doesn't change the word's meaning.
You don't camp at parking lots and rest stops, you stop there to rest up and continue to your destination. Why would anyone have a parking lot as a destination?

Yeah. Camping implies you're on vacation as a choice to have fun. Sleeping in your car is akin to a hobo or tramp life. At the very least I'd have to have a teardrop to pull behind my Jeep because I could not fit in it to sleep comfortably.

Car campers "have fun" saving over $100/night while on vacation in order to "have fun" spending that money on other vacation activities. Camping in a tent would not be a fun vacation for me, personally. But different strokes!
Ew. No way am I sleeping in my car at some rest stop in the cold with with nothing but a dirty public bathroom. Or parked along some street with no bathroom and just hell no at some truck stop or parking lot.

So let's say you pick one of your options, Cracker Barrel. This is where you stay for a couple nights? How do you bathe and brush your teeth?
Are you going to go into the restaurant with your toiletries and change of clothes?
The places you listed are known for allowing vans and RVs to overnight, but many of them do not anymore. Overnighter's are advised to call ahead to ask. Someone sleeping in their car is more likely to get the police called.
Many rest stops do NOT allow overnight parking, law enforcement will come and ask you to leave.
