Assuming what you state is even true...
Because the height of an adult is static, whereas those other traits are not?
And because the photos on most celebrity pages show one's hair color anyway?
But I decided to check for myself. I looked at the pages for Brad Pitt, Taylor Swift, Amy Schumer and Kanye West. On each I did a page-search for 'height'. Nothing. No height listed for any of them.
So...

Wiki has heights (and other physical stats) on some celebrity pages, but usually it's because they are or were an athlete (Lebron, Michael Jordan, The Rock, etc.). So those stats are relevant. I haven't been able to find any non-athlete celeb pages with heights listed. And I checked Angela Merkel's page (the example from the OP), and maybe I missed it, but I didn't see her height listed.
I want to know why they don't list the date of death for all celebrities. Almost all of them have a date of birth listed, and some have a date of death but not all.

Can you provide an example? I don't recall seeing the page of a deceased celebrity without a date of death.
