I can’t speak for Android devices, but I can turn on WiFi when in airplane mode on my iphone. I’ve done this at my friend’s house. He has no cell service at his house, but has cable internet. So at his house I put my phone on airplane mode so my battery doesn’t quickly run out. I then manually turn on my phone’s WiFi setting and then enable WiFi calling. I can make and receive calls, text and have internet access while in airplane mode.

Is this what happens if I turn on airplane mode?
I am assuming this free unlimited data is over the network and not going to wifi. You can simply turn on call blocking in settings and block all calls and texts (or download a blocking app and block all calls and texts). Calls won't ring and will immediately go to your message, texts just won't go through. Change your greeting to have people email you if it is important. You will still have data and can use the internet/email but double check that indeed you do have unlimited data out of country.
You can check with your provider to see if texts messages are the same as a phone call but I do believe they are and you pay more for receiving and sending. Easy to turn them both off either in settings or with an app.
On iPhones, for example, it simply turns off cellular service and leaves WiFi on. It used to turn all signals off before maybe iOS 11 or so.
No, it still turns off WiFi, but you can turn it back on while still in Airplane mode. It has worked like that for a long time. It still does. I just tried it on the latest version.
Yep. It works like that on every device too. There is a Standard in place here and every manufacturer implements it the same way so there is no confusion about what it does.
