I want to take my wife horse riding for her birthday (she said she always wanted to do this) and I wanted to know if anyone knows of any stables that have a program or business that take people out riding.

You won't be disappointed, they have nice horses, I am very allergic to horses but still love to ride I have to get all doped up on antihistamines to do so, and still managed not to fall off of the horse....
