Is there anywhere in Charlotte to get real Texas style BBQ?
You must re-phrase your question. "BBQ" here = pig. It is our understanding and to our horror that those in Texas seem to cook the wrong animal and call it "BBQ".
I must be too new here in NC. My idea of "barbecue" is to slather the meat with "barbecue" sauce (ketchup and molasses based) ... and grill it. <grin>
But I look forward to trying it.
That is actually called "grilling".
My version of bar-b-que is starting with a dry rub, followed by long, slow cooking over coals. You then add the "wet" during the cooking process. While I don't have as strong of feelings about the type of wet sauce that others have, the meat does have to be brisket! (yes, I'm from Texas.)
My people are from Texas and BBQ can be beef or pork or chicken too. It might be brisket, it could be ribs. It is a slow smoking process overs coals and wood chips.
For the record, I don't know any place in Charlotte that does real Texas style BBQ. I've even gone to the "hoody" areas looking for a BBQ place with the right type of smoke coming form the back. No luck. Oh well.
You will hear ads on the radio that tell you that Mac's Speed Shop has good brisket. I'm not a big fan, and as baybrook posted, have not found anything in CLT that compares to what you might get at, say, Angelo's BBQ in White Settlement (Fort Worth area). I'm not sure that I recall finding beef ribs anywhere here.
I've actually had decent brisket at Big-E's BBQ in Kings Mountain (Exit 8 off of I-85).
I would say your best bet is to learn how to make it yourself.
I took a friend there & she liked the brisket. Her sister lives in Ft Worth, so she's had brisket in Texas many times over the years. She said it was very good, but I don't know how it compares to Texas BBQ.
They're not in Charlotte (sorry), but I highly recommend Lexington BBQ #1 and Gary's in China Grove. If it's a matter of convenience you could take note of them for a trip because I can't think of a place in Charlotte where I've had really good barbeque.
For what its worth, R&R BBQ in Concord does a beef briskette on Fridays. There are plenty of places (Bubbas comes to mind) that do beef ribs. Also, one of my favorites, Carter Brothers BBQ in High Point does beef briskette regularly. However, I will admit that I have absolutely no idea what true Texas style BBQ is like, so I don't have any frame of reference for a comparison.

I know what you mean. But after all this talk, I'm feeling a need for barbecue.
