Just wondering, as we will probably be moving in on Christmas Eve/Day or New Year's Day, will things be open? I know of course not everything, but will some stores and restaurants or fast food places stay open?

Yes, more so on New Year's Eve/Day than Christmas. Most gas stations and a grocery store here and there will be open on Christmas. You may be able to find the occasional McDonald's open on Christmas as well.

I drove all over Charlotte on Christmas day hoping to find some eggs a couple of years ago. I found nothing open.

New Year's day most places are open, though.

Grocery stores are usually open on Thanksgiving until the afternoon and evening. Not much is open on Christmas except for movie theaters and dvd rental stores. Jack in the Box is usally ope for a while too.
