People can appear to be normal to some extent but have a demon, yes. Serial killers generally do a great job of hiding them until they get caught, for instance.

Evil spirits are something altogether different. They have influence over a person's behaviors to whatever extent the person allows them to. Eventually, if "fed" enough the person's will deteriorates until demonic possession becomes a reality, most notably with occultic practices, because they are the most diametrically opposed to G-d's laws pertaining to worship and spiritual matters.
