Laid back yet very urban cities? (people, Boston, Chicago, cons)

Does this exist? Are there any cities out there that are laid back like let's say Honolulu or San Diego, yet have the the urban landscape of a dense city like Chicago or Boston?
It just seems usually the more urban and dense the city is the less laid back it becomes.

Eh, I have lived in Chicago 20+ years and it's more laid back than say NYC, Boston, Philly or DC but I wouldn't say it's laid back overall. It's certainly still has a hustle and bustle mentality, just more subdued than the East Coast.
I am starting to think possibly Minneapolis might be one city.

Minneapolis is not more urban than Honolulu or San Diego
I have never been to Denver or Seattle but these were two that came across my mind.
I don't consider Miami to be laid back at all. Miami might not have the hustle and bustle mentality but it is stressful. It just feels so disorganized and scandolous.
