Been to both. Different vibes. Both are nice, but in different ways. Destin seems to have more energy, more of a pure beach vibe. Hilton head is more laid back. More trees, golf and bike trails.
Destin has become a nightmare...Highrise Hell. The traffic in high season is beyond horrible. The only thing they have over HHI is, mercifully, the sugar sand beaches.
HHI has also gone past the tipping point, development-wise. But at least they have kept it on a manageable scale.
As for me, I'm gonna stay right here on my fine little island.
I think Hilton Head has more rigorous development standards than Destin, although the natural quality of the beaches in the Panhandle is unmatched on the Atlantic Coast, in my opinion. I actually prefer the South Walton area (Seaside, Alys Beach/Rosemary Beach, etc.) a little further east over Destin itself.

I agree. Destin has better beaches, but Hilton head is more upscale.
Hilton Head Island beach itself is subpar IMO, although I enjoy going to the island quite a bit (more for nice-ish dining, golf, walking on trails in Sea Pines, etc., than the actual beach). Destin beach and most of FL Panhandle beaches are much nicer. Best beaches in SC in my opinion are Kiawah Island public beach (which I heard may be, or has already, been closing?), as well as parts of Edisto Island.
In terms of energy, Destin also probably wins, but it's a completely different feel from HHI, so I feel reluctant to compare the two on this category.
