An economics degree with a statistics or computer science minor should be much more employable than an econ degree by itself. At some schools, the econ program is where the students go who can't get into the business school and having a serious minor is a way to distinguish yourself from them. Internships are key.

Or what about a major in Economics and minor in Management Information Systems?
