Say I purchase a touchscreen monitor

Just an example, one of these
HP Store

How would they work?
Could I use them as a second monitor with touch screen on an All-in-one touchscreen or windows 8 touchscreen laptop?

Could I use them as a touchscreen monitor for a non-touch laptop/desktop with windows 8? windows 7?

Can someone explain this to me, and what connections they would require as well.

Thank you!!! =]

It also plugs into a usb port of your computer for the touch screen function.

Most All in ones don't have a video out port, so you'll need a USB to Video adapter.

Yes, it says it Windows 7 compliant. It will be kind of awkward reaching over your keyboard and mouse to touch the screen, which could be why they offer a quick release so you can pull it out for a more ergonomic position.

You'll have two cables one for video and one usb. The video cable will either be 15 pin vga, DVI, or display port. It is plug and play.

Thank you!!! =]

Keep in mind that not all of those screens are multi-touch capable.

The first two are single touch, and are designed for Point of Sale applications where only one touch is required at a time.

Make sure that whatever you get is Multi-Touch capable.
