Very true. Many managers try to control expenses to an extreme. That burger that was dropped on the floor may very well find the gravity again to make it back to the bun. In restaurants, the "special of the day" is foods nearing expiration. As for a good hand washing after using the restroom, many splash some water, a bit of soap on the hands and rinse right away at best. It's supposed to be a thorough wash for 20 seconds.
In the restaurant biz, ain't no one has time for dat. You are worked to death with no time to even pee.
Reminds me of an old joke: A man walks into a roadside diner and orders a hamburger. He observes the chef take ground beef, put it in his armpit, and squish it with his arm to flatten it.
Upon complaining to the manager, the manager says "that's nothing, you should see him in the morning when he makes the donuts"

I worked in an upscale restaurant when I was in high school. The things I saw in the back is the reason I rarely go out to eat now.
