Fiance' & I are about 5'7" & under, so we don't have long legs. And $300 each is good enough for us. We're just doing it for fun here & there...no diehard cyclists or anything. And after a while if we really do it that often, we'll upgrade later down the road.

And cheaply built bikes will ensure that you continue
not to do it more often. If you don't enjoy the "for fun" rides because of a crappy bike you certainly won't keep riding. In the end, that $300 you did spend on each bike ends up wasted and your garage ends up more cluttered. Go to a proper bike shop and talk to the staff about the type of riding you want to do. Have someone there "fit" you for the type of bikes your rides will tend to be. A trendy fat tire mountain bike for nothing other than smooth pavement doesn't make much sense. If nothing else you'll learn what to look for (frame style, saddle, sizes, bars that are comfortable, etc) and what not to waste money on. If you still decide to go look at those Costco bikes at least you'll be better informed. What works for one person won't for another.
Cyclists upgrade their bikes all the time. Bike shops probably have classifieds/bulletin boards. You could get very good deals on much better bikes that actually suit you and the type of riding you do. Not to mention supporting a business that will actually be able to help you if/when the big box store junker needs tires or breaks down. It will...the big box store won't be there for you.
