I'm a 60 year man who just started dating again after 7 months of recuperation from a bad breakup. I've been seeing a 60 year old woman for about a month, and I'm looking for new ideas on where to take her. So far its been dinners and drinks, yoga class on Sundays, and she has cooked dinner for me. I feel ready to breakout into something more exciting. My ideas so far:

1) Escape Rooms
2) Top Golf...though she's not a golfer.
3) Comedy Clubs
4) Bowling

You have already had multiple dates with this person, so that's good. The dates you've had so far would be pretty typical for even 20s/30s singles. They are fairly generic interest dates. There are many recommendations that can be made, it might depend upon her specific interests. After what might be like 4-5 dates that likely you have planned yourself, I think you are at enough of a comfort zone where you can talk about events out together.

*The Perot Museum
*Walk along Lake Carolyn in Las Colinas, maybe take a gondola ride
*day trip to the crazy silos in Waco (the Gaines market)
*Walk on the Katty Trail and stop on Knox/Henderson for a great meal at La Duni or there’s a couple right on Henderson
*Mystery Dinner Theatre at Northpark
*Hiking — there’s a great trail in Cedar Hills
*Luxury movies - with reclining seats (Grapevine Mills) and order a nice meal with the movie
*Wine and art night — there are several where you bring your own wine and they have instructions and supplies for painting on a canvas and it comes out very nice!

A concert at the Kessler Theater. A play at one of the smaller local theaters like Garland.

Four Day Weekend (improv comedy in Lower Greenville)
Medieval Times
Walk around downtown Dallas during the day on Saturday. Recommend stopping through the Joule (grab some coffee at Weekend and browse the bookstore), the Adolphus, window shopping, and then grabbing brunch and champagne at the Commissary .
White Rock Lake
Arboretum
Fort Worth day (the modern and the kimbell are both great)
Go see a local play

Hopefully that provides a couple things you'd be interested in.
