If a business were to open in El Paso catering to Vegetarians, what sort of products would it carry besides the very obvious Fruits and Veggies. I see a growing trend in this market, and one not many have taken advantage of.

Something vegan, like: pasta dish, Gardenburger (but not the kind with cheese), hummus w/ pita, avocado and tomato sandwich, spicy beans and rice, tofu scramble, hearty vegetable soups, etc. Bonus points for vegan baked goods or other desserts.

A combined vegatarian/vegan grocery/eatery could make it if you had the items Topaz describes above plus some great vegan desserts.

or...you can have a place featuring fresh ethnic foods (most of which happen to be vegetarian) which would let you draw from a bigger population. A good example would be to establish a place like Mountain Oasis in Flagstaff, AZ.

Also, if one lived in a large enough city, maybe include a proper Chef to prepare a week's worth of take home meals based on a veg/vegan menu. There are several places here in Portland (around 2+ mil people in metro area) which offer these types of meals, but none that offer a veg/vegan choice. And there are several businesses where you can go into the store, and purchase fresh (already prepared, but not cooked) ingredients to make up your own week's worth of meals.

I think this is a great idea for working people who don't have the time to cook from scratch, and are concerned about what goes into their foods. They can choose all the ingredients, spices, condiments themselves.

Don't leave out the soyrizo -- I like that better than chorizo because I don't like what they make chorizo from. Soyrizo has the same flavor, you can do the same things with it but it seems healthier.

When I was vegetarian I loved all the things I could do with tofu. Depending on your spices and how you cook it, it can be very meatlike and used in alot of different dishes. I had a recipe for tofu scramble that even my picky non-veg daughter loved.

This was back in the mid-90's. Let me tell you what happened, heh. Someone brought a dip to a company party that I mistakenly assumed was meat free. I was enjoying it and asked the person who brought it what the ingredients were thinking it was cream cheese and some kind of spices and herbs and veggies. What I thought were chopped up teeny tiny pieces of veg was actually chopped up teeny tiny pieces of ham! That's all it took for my love of meat to come flooding to the fore again, lol! I did enjoy it my phase, I just missed meat too much, I guess.
