I got a Filstar XP from a friend for a 75gallon setup I am making and I basically need the XP Parts tray Rena Rena Filstar XP Parts Tray Aquarium Canister Filter Parts but it looks like everywhere is out. Does anybody know why there is a shortage or if there is an alternative I can get ?

Take white plastic egg crate and make one; it's just a tray, after all.
If there's a local fish club near you go to the meeting; everyone has spare parts.

On most of my old freshwater tanks I use the Filstar as a bio-media only, and only have to check it every two, or even three months. I use an easier to reach hang-on-the-back filter for getting particulate matter.

Inotherwords, I don't put carbon, resin, or other replaceable media in the Filstar. the mulm you will see when opening is the dead bacteria; in fresh water it won't matter unless you're involved with very delicate ph fish, like the green phantom pleco. or L-numbered plecs.
