I'm not sure what's going to happen on the 4th. I'm leaving Florida early in the morning, flying into NNY around noon, then we have about a 2.5 hour drive to my mother's house from the airport. So....unless BIL makes a BBQ, I'm out of luck.
I've been to one Pig Roast. I have a tough time eating the poor little fella after watching him go 'round and 'round on the spit like that, so I usually just eat the dishes people bring and stay away from the pig. But it sound like fun otherwise! Enjoy.
What to eat for the 4th...hhmmmm.
Potato salad sure sounds good, but noone will eat it but me.
They won`t eat kidney bean salad, macaroni salad, none of it. Sux.
Sooooo...maybe some T-bones soaked in soy sauce or something with their special seasonings. We are sick of burgers and hot dogs.

We are away from family and just grilling out with a few friends. I imagine we'll either do chicken or burgers, and I am going to make a side dish of "Mexican caviar" -- black beans, avocado, tomato, scallions, fiesta corn, hot sauce, apple cider vinegar and canola oil...yummy and healthy

Im working but we'll probably go to dinner of bar-b-q, wiith a family friend who really doesnt have anyone to 'hang' with. (Both his parents are 'gone' now and he was an only child so we are his family).
