I always stop at the lobster tank in the grocery store to say hi to the lobbies. They are interesting to watch. I don't really care much for lobster. though; I prefer crab. mmmm ... crab ...

I really would like to find just goose breast , but probably will end with the whole bird if I find a smaller one. If not, then a lamb roast. That's for X-Mas. My X-Mas Eve dinner is meatless; so just fish and salads.

Prime Rib roast- Buy the whole rib at a better price (7ribs) I'll take the roast off the bone and tie it back on for easier carving
cook til it's 128 degrees and pull out let set for 15-20 minutes

Also have a leg of lamb- I'll also bone this and tie it back on for easier carving- delicious!!

With all this talk of rib roasts, I suggest that Yorkshire Pudding is not to be missed.

When the roast is done, remove it from the roasting pan heat the pan and oil up to 450 F and pour popover batter into the hot fat. Cook until it is popped or done, usually about 20-30 minutes. Don't let it burn, but you do want all the beef bits to adhere to the bottom of the pudding. And, you do want it to be oily with the beef fat. Wow!

Batter should be beaten to death, stashed in the fridge for at least 20 minutes, taken out and beaten to death again. I mean TO DEATH and the consistency should be soupy thin.Pan should be SMOKING HOT.Just making sure because it's one of my favorites and I've screwed it up more than a few times.

Our traditional Christmas Dinner will feature Ham, not sure what else (only the 3 of us)
Since Christmas Eve dinner is tradionally fish, DH and I will go to Uncle Bud's for catfish (if they are open). DD has tickets to the football game.

We had Christmas dinner (rib roast, Yorkshire pudding, and veggies) last weekend thinking hubby's chemo and radiation would start the next day. Well, it was delayed and will start tomorrow. He shouldn't start feeling too bad for a while so we ordered a Honey Baked Ham. I'll make scalloped potatoes or garlic cheese grits and I don't know what else. We also have some good champagne!
