When we were kids/teenagers, I remember having an apple cake that was really great. I don't think I've much had apple cake since then--or can remember it anyways.
I like homeade coffee cake and boston cream pie. I've also eaten a rum cake (years ago) that had a ricotta filling in it. Gosh, I think it was a bite of heaven.
The one that happens to be on the plate in front of me at that particular moment.
