I like Rao's, Lidia's (she has several out) and Essentials of Classic Italian Cooking. You really only need to buy Essentials.

"Carluccio's complete Italian food" by Antonio Carluccio

"La Cucina, the Regional home cooking of Italy" by The Italian Academy of Cuisine

" Opera dell'arte del cucinare" ( "The Art and Craft of a Master Cook) by Bartolomeo Scappi - Renaissance cookbook from one of the Pope's chef ( late 16th century- truly old world !!)


I love "Jamie's Italy" by Jamie Oliver, despite being British he seems to really understand Italian regional cooking and flavours.

If you are looking for more of a family-oriented Italian cookbook, you might try "An Italian Family Reunion Cookbook" by Gail Sforza Brewer. I don't need an Italian cookbook but I just like to read it and have had my copy for over 30 years.

Library has a lot of good ethnic cookbooks, but this might also help you out.
