I decided to create my own variety of a recipe we did in class and would like some feedback on it.
Sugar - 2 oz
Water - 1.5 fl. oz
Vanilla extract - 1 tbsp
Grapefruit Juice - 1 cup
Honey - 1 tbsp
1)Heat sugar and water till it lightly caramelizes.
2)Add in vanilla extract and stir
3)Add grapefruit juice and simmer till sugar is dissolved
4)Add in honey
What I get is a liquid sauce with the strong hint of grapefruit but very sugary. Also is not thick due to the absents of stock and the process of reducing.
Original recipe - 1 pint
Sugar - 8 oz
water - 4 fl oz
Orange zest - 2 tbsp
Orange juice - 1 pint
Star anise - 2
Brown stock - 2 qt.
Honey - 3 tbsp
Whole butter - 1/2 oz
1)Mix sugar and water till it lightly caramelizes.
2)Add the zest, juice, and star anise and stir together until the sugar is dissolved and the sauce is smooth. Add the stock and reduce until the sauce thickens and coats the back of a spoon.
3)Stir in the honey and monte au beurre.
