Is it true that drinking coffee makes you short? I only have 1 cup of coffee maybe once per day if not every other day or maybe even once in a while and every time I do my mom comes in bugging in how me drinking coffee is just going to make me shorter than what I am right now, standing at 4'11.

No one knows. There is no peer reviewed and published research showing a link between being short and drinking coffee.

I'm 6'3" and drink a lot of coffee. Don't think it is an issue.

You provided no link or reference.
It is generally not smart to believe every thing you read online. Hint: Sometimes stuff people say online is not true. Sometimes stuff people's mothers say isn't true either. (Shocking, I know.)

My mother used to tell me if I unbuttoned my bellybutton, my butt would fall off. '
I didn't believe her at five years old, and 50 years later, I still don't!

I was told this, too. I never really believed it. I've never seen any studies done on it.

If you're an adult and have finished puberty then you won't be growing any taller anyway, coffee or not. It certainly isn't going to shrink you.

I believe "stunts your growth" was the favorite saying.... ( at 4' 11" you shouldn't risk it!)

I highly doubt it. The tallest countries in the world (mostly Scandinavians countries) also happen to be countries with the highest coffee consumption. Not suggesting any causation here.
