When I grill, I always grill some 1/8th -1/4 inch length way sliced zucchini on the side. I brush it with soy sauce (It sits in a pot that I poured soy sauce all over it.) That's it/ Soy sauce. Sometimes, I even have some left over by the time I stop grilling everything else. Do you guys do anything like that?

One of my favorite grilled sides is grilled Boudin. It qualifies as a side because it's basically dirty rice stuffed in a sausage casing. Grilled it becomes crispy on the outside and gets a nice smoky flavor.

We like to grill zucchini but I prefer it in slices not cut lengthwise. Well, let say spoiled brat prefers it in rounds. He doesn't like his veggies too crisp. I don't mean he likes them mushy, but he wants them on the soft side. Yesterday, along with the zucchini, I did jalapenos and shallots. I also cut a peach and a plum, marinated them in oil, rum, a little corn syrup and almond extract. They were perfect.

I like to grill zucchini too. I also like to grill eggplant and yellow squash. I think the eggplant is my favorite. I soak it in a brine solution for half an hour, then marinate it in a mix of basalmic vinegar and olive oil with some basil and thyme.

When we grill meat, we usually do a bunch of thick-sliced sweet onions and grill those, as well...sometimes zucchini and yellow crookneck squash, sometimes a whole bunch of veggies on skewers...lately, just before food is served, we brush thick-sliced bakery bread with oil, toss some seasonings on to taste, and toss that over the coals just long enough to get a toasty, grilled texture and taste.

I grill zucchini, but just brush some olive oil and sprinkle a very tiny bit of salt on the slices.

We grill corn on the cob, onions and pineapple a lot. Also will grill kebabs with onions, bell peppers, zucchini, squash and other veggies. I love the taste of char-grilled food.

Love some grilled thick-sliced sweet onions. Zucchini and yellow squash are also grill staples here in the summer. The family favorite is grilled asparagus! I take two of those long kabob sticks and make a 'raft' so they don't fall down the grill slits. Always a huge hit.
