More of the Golden Beet Soup I made the other day. Still so yummy! I just left it in the blender pitcher and put it in the fridge. Super quick and easy to heat up for lunch. If you make it, don't skip the cilantro, quinoa, and sour cream. They make the meal!

I am sick, and the rain prevents me from going to a restaurant because I don't want my sickness to worsen. These are the days I really appreciate how well mom has cared for me.

Tuna with avocado, onion, celery, dill weed, lemon juice, salt and pepper, threw in a little spinach and arugula. Yum!!!

Had a Chipotle Burrito Bowl today at lunch with my classmate. It was such a nice treat since I don't eat out very often.
