More of the Golden Beet Soup I made the other day. Still so yummy! I just left it in the blender pitcher and put it in the fridge. Super quick and easy to heat up for lunch. If you make it, don't skip the cilantro, quinoa, and sour cream. They make the meal!

Soups are so easy to prepare and freeze well. It's always great to have a home-made frozen soup that can be thawed and enjoyed on those days when you don't feel like eating let alone cooking.
