Default Tom Turkey vs Hen

Okay I know that a tom Turkey is male and the hen is a female, I also know that the tom will be larger ten the hen> What is thje differance in say meat is one better than the other I am very confused on this. I do not need to cook anything bigger than 15 to 20 lbs, so what is the real differance besides size and gender?
