Well, I worked up the courage to use it last night and dinner turned out just fine! I didn't let anything boil over or burn on the stove top, though I did let something in the oven get too crispy. But, for my first run everything was more than edible and I feel better having tried it. I was amazed at how fast the burners heat up! Boiling water was a piece of cake.
Cleaning up really wasn't bad either, easier than with my gas top actually though I'm sure I'll make bigger messes in the future. Thank you all so much for your advice and tips. I think this thread will be really helpful to other people too!
