I *adore* mojitos.
It's funny, the first one I ever had was also in California, at a wedding reception on a really hot day a few years ago. Since then we have had our share, but usually I can only have one, or two weak ones!
My husband makes them, so I am not sure of the recipe, but the Bacardi recipe looks to be what we do. We grow our own mint which is helpful.
If I don't make simple syrup then we just use powdered sugar.
Do a search, I think we've talked about mojitos here before.
Thanks, I tried to do a "lighter" caloric one and used artifical sweetner--not so good. The sugar makes the difference.
