I LOVE red beans and rice, just like you said. With scallions too, and some hot hot peppers.

We do the same. sometimes it will be in there for months. This year our family is all over the place. Our daughter and son in law leave for a cruise Friday, our younger granddaughter and family are in the Florida pan handle and don't get home til late Sunday afternoon and the other granddaughter and her family are busy with church. It happens to be my BD as well, so we are just going out after church and will do our ham/turkey Easter dinner on Mothers day. I will use the bone for split pea soup probably. If not, bean soup.
