Salt and malt vinegar on fries and fried fish is great.

Fries dipped in garlic mayo or curry mayo is great, too.

A lot of folks put mayo on their fries here. I like aioli and curry mayo.

Add finely diced onions.

In Belgium, the home of fries you can get all sorts of sauces and Dutch Patatje Oorlog (French Fries War), which is French fries with mayonnaise, sate sauce, and onions is rather interesting.

My favorite is mayonnaise, curry ketchup and chopped onions
Or with sateh (peanut) sauce.

I often ask for a side of mayo when eating fries in the US or Canada. Regular ketchup is just bland. Not a fan of Canadian ketchup which is usually sweeter than in the US. I would never try vinegar on my fries. That just sounds weird.. It's sad Americans only eat french fries with ketchup. They are missing out!

On a side note, what that kid is eating in the youtube video is frites sauce and is watered-down mayonnaise. Real fries connoisseurs eat it with real full-fat mayo.

Malt vinegar is wonderful on fries, as is aioli, buffalo sauce, mustard, ketchup, green chile dip, cheese sauce, ranch dressing, mayonnaise, gravy, curry sauce, rosemary butter.... Gosh, I think most anything is good with fries, and I think I've had them all.

When I was a kid, we always had a bottle of malt vinegar in the pantry for French fries, battered fish, and wilted spinach.

Oh my god, you just reminded me of this goodness (in bold) that I did with fries. My (now ex-)husband and I would go to a Thai restaurant and buy a container of red curry sauce. Nothing in it; just red curry. Then we'd go buy fries somewhere else. Then we'd take our two purchases home and dip the fries in the red curry. Drool...

I LOVE vinegar on French fries. I keep a little spray bottle to spritz them. What do you think is in ketchup? Tomatoes, vinegar & sugar are the main ingredients.
