I've also unearthed grits with sausage gravy, but have never seen recipes combining them with chicken or beef. I love shrimp and grits, but would like to branch out. Has anybody come up with a recipe using other protein? I'm looking for main dishes.

I grew up eating grits but never had them with Shrimp until the last few years. Raised in the south by parents born before the Great Depression, grits were a staple. Almost everyday. Wasn't a problem for me as I love them.

Most of the time my grits were served with a couple over lite eggs on top, which I cut up and mixed in the grits. That was served with bacon or sausage, (baby links or smoked or patty) and some time a piece of left over steak from the night before.

You could mix it with crumbled sausage and cheese, which is similar to the sausage gravy you mentioned.

Fish fry's were common on a Friday night, usually fresh caught fresh water fish battered in a corn meal and fried, served with Grits and baked beans.

Now if you are looking for more gourmet ways to prepare them, I can't help, . Just a southern boy here.

Ham, chicken, bacon ... Have you searched any recipe sites? There are plenty using these.

Grits with fish, chicken, salmon, and even steak. I have seen it around here in this part of the south.

I'm in GA. I looked on All Recipes, and nothing other than the shrimp or sausage additions came up. If anybody has another recipe site that is a bit more adventurous, I'd love to see it!

Go to google, type in grits and fish then click on images to see pictures of grits and fish or whatever. Then right click on the image and scroll up to open link, then click on open page. I just did it and a recipe in details came up.

Classic shrimp and grits has a spicy ham gravy....you could leave out the shrimp if you want. I think there are so many variations that you can just do whatever you want.

Just type in polenta. You can use them for a southern-themed substitute in those dishes. I've served filet mignon on smoked gouda grits with sauteed baby collard greens for company and they loved it.

Grits are really great with breakfast pork sausage. Great with ground beef patties. Grits, butter and cheese (and salt) really need no accompaniment. Excellent with eggs and bacon as well.
