I am a big fan of leftovers because it means creating another simple and easy meal. For instance, Monday night we had chicken kabob's on the grill. I grilled six skewer's. I had 3 left, took the meat off and cut it up to add to a tossed salad for last nights dinner. Leftover fried chicken cutlets I have used to make my stove top chicken bake, left over chili I add on top of spaghetti.
all the time. In fact I am making veggie soup (creamed) right now, with a bunch of left over veggies; both fresh and frozen, plus a jar of tomatoes I canned. I will add cream later on in the day. It is rare I throw anything away, so left over, imagination is the name of our game.
Here's another goodie: if you got Chinese or Thai food and have a little bit left of a bunch of different flavors, stir-fry them all together with your leftover rice, and you've got some pretty decent fried rice without all the chopping.
I never use our leftovers in another meal. Either my husband takes the leftovers to work for lunch the next day, or I pack them into a plastic container and freeze them to send home with my parents the next time they visit, so they'll have an easy meal to thaw for dinner sometime.
I used to save leftover chicken to slice and use as a pizza topping, but I put a lot of seasonings on the chicken for dinner, and the flavors tasted weird in the pizza.
There are a lot of things that you can do with leftovers. I'm particularly fond of 'clean out the fridge' soup. Or casseroles. If you throw some cheese on top, it looks good.
No. I hate leftovers and won't eat them - my husband does, however, and he just reheats the same meal from the day before. The only time he "repurposes" a part of the dinner is for something like steak and eggs the next day.
We use leftover vegetables in rice dishes, omelets, use roast chicken bones etc. to make stock that then gets used in future dishes, use leftover beans and rice as burrito fillings, use leftover chili to make chili mac, etc.
I love it, but I never have enough naturally occurring leftovers to make it.
I have to purposely make extra portions that are designated JUST for making bubble and squeak.
