My husband does rolls. He's been stationed in Asia a lot, and got pretty good at it. We use the bamboo mats, etc.
Most of ours are vegetarian, though, because sushi/sashimi-grade raw fish can be kind of...suspect...where we are. Also, I'm pregnant right now, so raw is off the table. And I don't like krab sticks.
For use in sushi/sashimi, raw fish should always be frozen first to kill the parasites. The sea urchins and spot prawns come chilled.
