I actually have a whole day at home. We are having chicken fried chicken, mashed potatoes and artichokes. I might even bake something for spoiled brat.
As of tonight the long weekend begins for us until Monday night. Tonight tomato soup with basil,a spoon of yogurt and grilled cheese toasts and a beer.
Tacos. Husband is just finishing up the meat, and he is currently shredding lettuce. He will cut tomatoes next, then shred the cheese. It's a really bad, super nasty, icky, cold, rainy day and we aren't going out ANYWHERE, and we can "graze" all afternoon! In the warmth and in the dry! YAY!!! Have I mentioned that I LOVE my husband lately?
Mixed veggies of red bell pepper, onion, garlic, celery and pan roasted chicken tenderloins and sliced sausage. Rice for us. Pork rinds for our low carb friend.
Meatloaf sandwich, spinach salad. Chocolate cupcake for dessert. I hope everyone has a blessed Easter and Passover. I'm in a quandary as to Easter dinner. The butcher wants to charge me 60/70 dollars for a boneless leg of lamb which I think is highway robbery. I may fold and settle for ham (yuck). We shall see..
