We are having, very exciting frozen tilapia from Sam's. I am making a wonderful, original Carrot and Raisin salad and cooking some fresh green beans, straight from the garden: not my garden though, the farmers market garden. In other words, not a really exciting dinner, but healthy and it taste good.

Probably chicken casserole:


chicken breasts
onions, 1 roughly chopped, 1 thinly sliced
carrot, roughly chopped
peppercorns
fresh bay leaf
butter
plain flour
salt and freshly ground black pepper
free-range egg yolk, lightly beaten
double cream
squeeze of lemon juice

Tonight I am making chayote squash Chayote Squash minus the 1 tsp of urid and channa lentils. Serving with coriander chapatis instead of rice. To drink lassi. For dessert honeydew melon.

sounds pretty tasty; I wonder how it would be if you added rice to it? I am looking for some dishes to cook up ahead of time for the freezer. We have some people in our church with health problems. I usually provide a few meals and this might be a good one. I am doing a burger casserole this afternoon for a couple who need some help.
