I had lots of store bought Rotisserie Chicken left over from yesterday...

Made Curry Chicken Salad...white meat chicken, scallions, mayo, 1/2 Bartlett pear cubed, or apple, today it was pear.
vinegar peppers chopped, curry powder to taste, ground black pepper, salt. some crushed peanuts. cilantro, or parsley, today it was cilantro.

the sweetness of the fruit balances so well with the hot and vinegary peppers.

Today it was on a Kaiser roll with lettuce.
