Food Expiration and what is sealed in (sardines, health, tuna)

I was boiling up the water for some green tea (lump at the base of the throat), so I decided to date my recent grocery purchases of canned fish (sardines, kippers, anchovies, herring). As I did, noted something interesting on the expiration (ie, best by for it still may be good afterwards) dates.
Fish in water expires next year or so, then fish in soy oil, in two years, and fish in olive oil, in 2020.
Now, it may be just the brand. These were ones like Ocean Prince and Beach Cliff, brands I don't normally buy because of the cost against the local, but they were on sale (at least last week for I was there this morning and that was not the case).
I also bought some tuna, not standard eating for me but always good to have around in the pantry, packed in water as well. The best date was.....next year or so.
USUALLY, I try to buy my stuff in water for health reasons and it usually goes so fast, that I don't worry about the expiration dates.......although since tuna is a hardly used item,there may be cans out there more suitable for hockey pucks (maybe for they might have been purged in the move). When it comes to sardines, though, I try for a mix for the oily ones are more of the pick of pizza and pastas. Ie, use the oil in the can for where olive, other, oil is needed.
But since I was in stockpiling thought this afternoon as I tossed and turned in bed, thinking of retirement fixed income to be, it is an interesting item to add to the equations.
