Foods where the allure seems to be being stylish, cool or "in" or "sophisticated".

Here are a couple of foods I believe often carry this phenomenon:
Rare meat
Mushrooms

Poke bowls. They're rice and raw fish. And they're everywhere.

Really?

Rare meat is something people have eaten forever. How is that "in" or "sophisticated"? It's a preference. I no longer eat meat, but I ate it rare for decades because it tasted better that way.

Mushrooms, too. How are they stylish or cool? They are a common ingredient.

Mushrooms? Maybe the ones that are extremely uncommon wherever you happen to live. Well, also truffles, truffle oil, truffle butter, etc., that kind of thing... ?

By "rare meat" I guess OP might have meant "unusual" rather than doneness level.

But mushrooms? These are pretty common, so I don't get it, sorry.

When I was growing up I remember the mention of pheasant under glass. Apparently that was supposed to be an elegant dish.

I still don't know what it is or why being under glass makes it special. Guess I'll have to look it up right now.

Edited to Add: Here it is: https://www.quora.com/Why-is-it-call...nt-under-glass

Looks like it's also served with mushrooms.

Basic, ubiquitous button mushrooms are about as pedestrian and earthy and unpretentious as it gets, IMO.

Mushrooms? Where mushrooms grow wild people go hunting for them. Especially poor people looking for food.
