I store mine wrapped tightly in the freezer, and it usually doesn't dry out and harden. If it does, you can microwave it in a bowl covered with a damp paper towel.

Agree about keeping the air out. Nowadays they are selling them in bags with a resealable opening, making it easier on us than those paper boxes with the wax paper lining.

I've had my brown sugar bag for over a year and it is still moist and separate.

I have a brick in the freezer. I will try the microwave solution. I was thinking of adding water and maple flavoring and make maple syrup from it.

Add a piece of cheap white bread to the container with your brown sugar brick.

It will restore it to normal condition in a day or so. Maybe two pieces of bread if the brick is really really tight.

Mine stays fine with the bag sealed up tight, but grandma used Debsi's bread trick, and it works.

I have heard of the slice of apple but never the bread. Never tried either. I was afraid the apple would get moldy. I keep in airtight real Tupperware container. Usually works unless it's been too long.
