Onion is used is almost everything here even though I abhor the taste of them if they are raw. But for actual eating veggies we do a lot of greens- spinach, kale (even before it was popular) and collards. Swiss chard is probably my favorite though and we grow it in the garden.
Tip on how to lighten up the flavor in raw onion: Soak it in some cool water before you serve it for a couple of minutes. Makes a very big difference.
Garlic (fresh or powder in EVERY meal) and fresh spinach in salad or lightly cooked with a bit of butter, cream, garlic powder and 1/4 of a chicken or beef Knorr cube to add flavor. yummy!
I do like onions, but sometimes I get gas pain in my abdomen from them unfortunately, so I avoid them.
