I eat a lot of Indian food (it's on every corner here in Silicon Valley, lol), and love almost all of it! My favorite dishes are paneer makhani, paneer tikka masala, butter chicken, and aloo mutter. Yum.
Funny story: I once ordered takeout from a restaurant, and requested moderate for my spiciness level. The person on the phone asked "are you Indian?" to which I replied "no, but I do love spicy Indian food!" They were like "Oh, no. If you are American, you have to get mild. Trust me." I reluctantly agreed, and ordered it mild. A few bites into my "mild" curry-whatever, I was literally SWEATING from the heat like I never have before. Good thing I took their advice, because even "moderate" would have killed me!!!
Oh so many choices. Since no one has mentioned it yet, I'll add Cajun jambalaya. Of all the different spicy things I've had, it may not be the hottest, but the blend of flavors is the best. Love the way the flavors of the sea mix with the Cajun peppers.

We have a restaurant nearby that serves something I am willing to bet is similar. It IS amazing! They also make a really good sliced beef in chili oil, and the twice cooked pork belly is wonderful IF you order from the Chinese menu, and not the nasty Americanized one.
Thai curries.
Cajun food.
Mexican? It depends. We have a great little food truck down the road, and I love their tacos, which they serve with plenty of cilantro, a grilled jalapeno, radish slices, and a lime wedge on the side. Most of the sit-down restaurants around here? Not so much, except for the chips and salsa. I can make better beans and rice at home.

There used to be a Chinese restaurant in town that served this wonderful sweet hot chicken. Sadly, they went out of business or changed owners, so no more chicken!
