I must have no less than 15 bottles of spices. It is mystifying trying to figure out what spice is good on what food and what spices go well together and which ones dont etc. It seems it might be easier to use organic peppers if they can replace spices in bottles.
When you say peppers you're referring to chilis? Sure, chili peppers can add a certain flavor profile to a dish, but they're not going to be a replacement for cumin or anise or other flavors. You're on the internet right now--it's pretty easy to look up what dishes use particular spices.

It's not mystifying at all. It comes with experience. Use only pepper if you want. It's your food.

If you wish to use organic hot peppers in place of rosemary, thyme, oregano, I think your food will have a sameness that becomes boring.
You can seek info on herbs and spices online to help you. And I am sure that someone, somewhere has written a book that deals with seasonings and spices. You seem to be seeking an easy, all purpose answer to your lack of knowledge. My advice is to seek knowledge.

We use peppers for cooking a lot. We also use spices, seasonings, and herbs for cooking. I don't know how you would swap out peppers for spices and accomplish much. Also which peppers are you planning on keeping? We use a wide variety and I had to check to see how many are out there. 19 families of peppers with 50,000 different peppers that you can cook with.
My thought is that you keep your favorite 25 or so spices on hand and possibly 6 to 10 of your favorite peppers on hand.
Realize that many of us keep much more in the way of spices, herbs, and peppers stored for cooking that that. I read another article that the complete kitchen would have over 100 different spices not counting peppers.
