On Food and Cooking by Harold McGee will tell you more than you ever wanted to know. The revised edition is @ 900 pages of info.

Alton Brown's cookbooks, or cookbooks from America's Test Kitchen will have a lot of the science and techniques for proper results. ATK, in particular, will not be adventurous or high-end style cooking, more American classics.

The Professional Chef.

It's a required textbook for most culinary schools and gives you the basics like how to butcher, the five mother sauces, etc.

BHG cookbook the old one from 1978 has a lot of tips very useful.

Jacques Pepin's Complete Technique is a very good book if you are trying to learn some of the finer techniques of cooking. It i one that I used for years ... until I lent it to my nephew and never saw it again.

This is NOT a book for those who struggle to boil water or who have to be told that you need to crack the egg into the pan BEFORE frying.

I have that book. It's one of the few that I've kept.
