Slow simmered pork shoulder in a piquant tomato based gravy with cauliflower and buckwheat

Ham, broccoli and cheesy rice casserole, whole wheat bread, fruit.

A big salad, comprised of Spring Mix, English cucumbers, Vidalia onion, the last of my home-grown cherry tomatoes, and fresh mozzarella, dressed with Balsamic Vinegar and EVOO. For dessert, a slice of my home-made Apple Cinnamon loaf.

Pulled pork enchiladas with ranchero sauce and a squash, onion, pepper saute. I have some leftover Mexican rice I'll add if it's still good.
