I'm just reading a book, entailing Kentucky, and in far western Kentucky they introduced Asian Carp into a lake for environmental reasons. Well, the Asian carp has spread and spread to the point they know want to eradicate it. Apparently the taste is horrible.

But, but! The Chinese, for some reason, find it to be a delicacy so some entrepreneurs have been catching the fish, and sending tons of it to China, as apparently Americans are loathe to eat it.

I've never tasted it, and is the taste that horrible? Can't you spice it up to where it's more edible?

Apparently, to catch these suckers, you go out in a boat in the middle of the night, with the lights off on the boat, once in the middle of the lake you turn the lights on and these carp come flying out of the water Jumping 10-15 feet into the air, and then you harpoon them mid-flight.

No. You're thinking of the snakehead. Different fish family.

I've heard exactly the opposite. A pretty tasty fish that is hard to filet is what I've heard?

Is it like swai fish? I have had that before & it was OK. I think Swai are Asian catfish but the domestic catfish industry didn't want them called catfish in USA.

I don't think carp is awful, but it is quite bony which makes it less fun to eat. Also, the flavor is affected by the water it has been swimming in. If the water is clean and nice, the fish is nice tasting. If the water is foul, muddy, and full of algae, the fish tastes muddy.

We don't have them in my area, and I don't wish to have them in my area, but if I lived where they are a nuisance, my dogs would be eating a lot of fish dog food. Fish is good for dogs and you can catch hundreds of pounds of those carp in an evening.

Those snakehead fish are rumored to be quite tasty. They are a worse nuisance than the carp.

Disclaimer: I'm not a huge fan of fish.

I've had Asian carp. Once. The taste was fine - mild like cod. BUT the bones were impossible to deal with.

Asian carp is not the same as swai. Swai (aka Basa) is an extremely mild white fish. Some would say they are tasteless.

Not bad.
Inexpensive. Finer texture than saltwater fish. Some fine bones but not as bad a rainbow trout but bones not as big as salmon.
Basically a oversized Goldfish/Koi.
What's nice about carp is that they can get big enough to make steak cuts.

I've eaten smoked carp and thought it was good. It was very meaty.
