Dear friend, grew up in southern Missouri, her Dad's meal was salmon patties.

Tacos or wraps, provided one has some kind of tortillas on hand (or flour to make your own).
Can be filled with meat, beans, or veggies, or all of the above. Great way to use up random leftovers too.

eggs with toast. Sometimes scrambled, sometimes poached. or burgers, I usually have patties & buns in the freezer. Or shrimp, they defrost fast.

Oh upthread I said eggs. That is a dish I will make if I get home & find I have no meat defrosted. But if the thread is about a favorite meal to make or go to, mine would be shepherds pie & chicken curry. ( home made ) Take out, Mexican or Chinese.
