I was wondering if anyone was made or knows of a way to make queso fundido (with chorizo) without using the oven. Every recipe I see on YT has someone using cast iron pan and melting cheese in the oven. One had it finished on an outdoor BBQ. Is it possible to make it in a regular skillet without dealing with cast iron or the oven? If so what are the drawbacks?

It looks like you can finish melting the cheese topping on a burner with a lid on the pan.
Cast iron cooks great and makes for pretty presentation.
Just try half a batch.

Throw it in an aluminum pan on a Traeger.

Might be nice if you explained what queso fundido is. Not everyone knows.

If you don't what it is, you probably don't know how to cook it.

Guess it's too much trouble for us non-mindreaders.

Bad hair day?
I googled it, found a lot of info and the prototype was accepted by my permanent room mate. To avoid leftovers I split it between two 4 inch cast iron pots, baked one in the airfryer and froze one. Spicy, greasy, cheesy dip went well with solid chips , guacamole and pico di gallo.

I tried it with lots of garden peppers, onion, ground beef and homemade fajita spice. Keeps without the cheese in the fridge for a day or two otherwise I freeze portions.
About a cup and a cup of pepper jack in a small cast iron pan in the airfryer on 350 for 4-5 minutes until cheese is bubbely. Perfect!
This morning I added a spoon of the meat/vegetable mix to rather bland pork sausage for sausage/egg/cheese breakfast burrito. Perfect.
