I love zucchini on the smoker. Cut in 1/2 length ways, carve out the seeds, and stuff w/smoked pork sausage and cheese. Or just sprinkle on some rub. I usually add cheese, but just a simple rub is a nice treat while smoke'n a brisket.....or anything.
Or grill it w/eggplant and some spagetti sauce, onions, garlic, cheese, what ever. Thats good too.
Capt. Is there anything you CAN'T Smoke? I am being serious... have you ever smoked dessert? I am always amazed at your smoked food...I would be suprised if you hadn't already tried smoked zucchini bread
Make mock crab cakes, use zuke instead with any other shreaded veggie and abit of ramano chees(shreaded) cook like you would a crab cake its yummy my husband who hates veggies will eat about 5 of thees
