I put a roasting chicken in brine yesterday around 2pm eastern time. We had a medical emergency with a grandchild and could not remove it. I just got home today and its been almost 24 hours. Can I still bake it? Will it be alright? It smells ok.

I'm sure it will be fine if it was kept cool. My recipe for turkey says to brine for 2 days!

Thats a long time, but what do you have to loose? If anything it will be salty and/or the meat "mushy".

Cook it and see what happens, and if you don't mind, let us all know how it turns out.

Hope everything is ok w/the grandkid.

It will be fine assuming the chicken was not spoiled BEFORE you brined it. Just remove the bird and rinse in some fresh water before using or soak in some ice water in the fridge for a few hours if you are concerned that it will be too salty. If nothing else, the brine retards spoilage. Were you also planning to soak it in buttermilk? If so, go ahead and do that.

According to this chart the maximum time for brining a chicken is 12 hrs.

If you didn't put a lot of salt in the water I would think there would be a chance the chicken would be OK.

Maybe you could boil or stew it and then make chicken broth/soup?

Thank you all for the replies...I had just bought the chicken at the store, came home put in brine and had to leave...It has been in the ref the whole time...

Yes, the grandbaby is ok...thanks...it was touch and go for quite a few hours...I posted what happened on the Knoxville forum....under UT Medical Center thread...it was very bad she is 5 yrs old and the first time she has been in a helicopter....a medical helicopter at that and no family was allowed on board...
